Homemade Basic Healthy Whole Grain Sandwich Bread

Healthy whole wheat sandwich bread. Basic recipe is hearty but light, with healthy ingredients like local honey, wheat germ, lecithin and wheat gluten. Freezes great.

Homemade bread is one of those comfort foods that man-kind just can't live without. Often times called "Our Daily Bread", this delicious honey whole wheat bread is made from the staff of life – wheat.

Kneading Bread By Hand, Mixer or Bread Machine

Because this is a heavy dough and the batch makes four loaves, it would be easier to use a stand mixer or a bread machine. The whole wheat bread dough can be kneaded by hand, but it will take approximately 15 minutes or so of heavy kneading to develop the dough fully. Honey Whole Wheat Bread Recipe

  • 4 cups water, lukewarm
  • 1/3 cup canola oil
  • 1 cup honey
  • 3 Tablespoons liquid lecithin
  • 1 1/2 Tablespoons sea salt
  • 2 Tablespoons instant dry yeast
  • 1/3 cup vital wheat gluten
  • 2 Tablespoons wheat germ
  • 2 Tablespoons soy powder
  • 10-12 cups whole wheat bread flour

How To Make Homemade Whole Wheat Bread

  1. Spray 4 regular size loaf pans with vegetable spray, and set aside.
  2. Mix water, canola oil, honey and liquid lecithin in a large mixing bowl fitted with a dough hook, or beat the liquids together with a hand whisk.
  3. Mix all dry ingredients together, except the whole wheat bread flour, and add to the mixer. Blend well.
  4. Add 10 cups of whole wheat flour and mix until dough forms a ball.
  5. Knead by hand or machine, adding more flour half a cup at a time as needed if the dough is too sticky. Knead for approximately 15 minutes or until dough forms a membrane when stretched (sort of like a balloon that doesn't tear).
  6. It's not necessary to let the bread dough go through two risings when using instant dry yeast. One rising is enough, but two won't hurt either.
  7. Divide whole wheat bread dough into four equal pieces, and roll them into a log, tucking ends underneath. Pinch the seem with fingers, and place bread seam side down in prepared pans.
  8. Let bread dough rise in a warm place until double in size. Try not to disturb the bread, or let it get any drafts. Covering the dough with a tea towel always works and helps keep flies away from the bread.
  9. Bake at 350 degrees for 30-35 minutes. How to tell when the bread is done? Easy, the bread sounds hollow when tapped.
  10. Remove from oven and let sit for about 5-10 minutes. Let cool completely on wire racks before packing them in plastic bags, or eat the homemade bread nice and warm.
  11. Makes 4 regular size whole wheat breads.
