There’s nothing better than home-made muffins, especially indulgent, gooey, mouth watering ones! Perfect for lunch boxes, teas and even for a quick dessert, these banana choc-chip muffins are moist, tasty and best of all, easy to make.

Ingredients:
1 ½ cups all purpose flour
1/3 – ½ cup of brown sugar (depending on taste)
1 ½ teaspoons of baking powder
½ teaspoon of baking soda
¼ teaspoon of salt
1 teaspoon vanilla essence/vanilla extract
1 large egg (preferably free range organic for best flavour)
1 cup mashed ripe bananas (roughly 2 large bananas)
½ cup unsalted butter (melted)
¼ cup of milk
¾ cup semi-sweet chocolate chips
Recipe Preparation:
Preheat the oven to 180°C (350°F). Line twelve 1/3-cup muffin cups with foil or paper muffin liners. In one of the mixing bowls, combine the flour, sugar, baking powder, salt and baking soda together. In a separate bowl, mix together the mashed bananas, egg, melted butter, vanilla extract and milk. Slowly stir the wet ingredients (banana mixture) into the dry mixture until blended into a batter. Stir in the chocolate chips.
Divide the mixture evenly into the muffin cups (filling each one about a 1/3 full). Bake the muffins until the tops are pale gold (about 20 minutes). A tester should come out with some melted chocolate but no crumbs.
Best served warm.
Recipe Alternatives and Tips:
There are several alternatives to the banana chocolate chip muffin recipe. To make a slightly healthier version, replace the sugar with Splenda or other baking sweeteners (be sure to follow the directions on the pack as usually less sweetener than sugar is required), and use skim milk instead of full fat milk. Low fat margerine can be used instead of butter, but does not have the same flavour.

Freeze bananas that are starting to become over ripe and then defrost later for baking – ripe bananas are better for baking.
