Ripe peaches taste best right from the tree. But peaches don't have to be in season to enjoy peach desserts and breakfast pastries. The smell of warm peach muffins right out of the oven, made with fresh or frozen peaches, will make anyone drool!

Making Peach Muffins With Fresh and Frozen Peaches

Both fresh and frozen peaches can be interchanged in this peach muffin recipe. Frozen peaches can be chopped up and used in their frozen state with good results. If frozen peaches are already thawed, it's best to drain them completely before using in just about any recipe. Fresh ripe peaches need to peeled, pitted and chopped before using in peach muffins. How To Freeze Peach Muffins

Peach muffins freeze very well. This peach muffin recipe makes 30 muffins. The recipe can be divided in half, or make the whole batch and freeze the rest. Make sure they are cooled completely before wrapping in plastic wrap or storing in large Ziploc bags. Peach muffins can be kept frozen for up to 6 months. Just thaw and eat!

Peach Muffins Recipe Made With Fresh Peaches

  • 2 sticks butter or margarine, melted (1 cup)
  • 2 cups whole milk
  • 4 large eggs
  • 1 Tablespoon vanilla or almond extract
  • 2 cups sugar
  • 6 cups all purpose flour
  • 3 Tablespoons baking powder
  • 1 teaspoon cinnamon, ground
  • 1 teaspoon salt
  • 6 cups fresh or frozen peaches, chopped small (see above)

Pecan Streusel Topping Recipe

  • 2/3 cup brown sugar
  • 2/3 cup flour
  • 2/3 cup pecans, finely chopped, optional
  • 4 Tbsp butter, softened
  • 1 tsp cinnamon

Directions:

  1. Preheat oven to 350 degrees F.
  2. Spray non-stick muffins pans or use paper cupcake liners.
  3. In a large bowl, combine flour, baking powder, cinnamon and salt. Set aside.
  4. Mix all streusel topping ingredients together in a small bowl and set aside.
  5. Melt butter and set aside to cool slightly.
  6. Whisk together milk, eggs and vanilla or almond extract in a large mixing bowl.
  7. Add sugar to the milk mixture and beat or whisk well.
  8. Add melted butter and mix again.
  9. With a plastic spatula or wooden spoon, fold dry ingredients into wet ingredients and mix only until moistened and blended. Do not over mix batter.
  10. Fold chopped peaches into batter.
  11. Scoop muffin batter 3/4 full into prepared pans.
  12. Sprinkle a little streusel topping on each muffin top.
  13. Bake at 350 degrees for approximately 25-30 minutes or until muffin tops spring back when touched.
  14. Wait 5 minutes until the muffins can be handled, then carefully remove to a wire cooling rack.
  15. Makes 30 regular size muffins. Recipe can be divided in half.
