These mushroom muffins are very versatile, they make a great picnic alternative. Served warm at parties they will be a conversation piece. They are simply delicious

When we think muffins, we tend to associate them with fruits and breakfast. Savoury muffins are not as popular with cooks as sweet muffins, still they have lots of advantages:

Mushrooms Health Benefits

Mushrooms are mostly water (80 to 90%) so there are very low in calories, therefore good if you are watching your weight. They contain potassium which helps lowering blood pressure. Latest published findings tend to demonstrate that mushrooms consumption could help reducing the risk of breast and prostate cancer. They are high in B vitamins including riboflavin which is good for healthy skin and vision, niacin helps with an healthy nervous and digestive system and selenium is often associated with an healthy immune system.

Muffin Making Tips

A muffin tin can be fiddly, there are a few tips that will help you . When using a muffin tin without muffin cases, make sure that each hole is lightly oiled.

If you don't have cases, use two rectangles of baking paper, cross them over.

If muffin cups remain empty when baking, pour a little water in the unused holes.

Mushroom Muffin Recipe

Kids like to get involve in the kitchen, but sometimes it is difficult to find appropriate recipes, as the kitchen can be a dangerous place especially for 4 and 5 years old. Muffin recipes are great to make with the kids because they are easy and do not involve using the stove.

Ingredients

  • Spray oil for frying
  • 175g closed cup mushrooms, sliced
  • 175g plain flour
  • 2 tsp baking powder
  • Pinch of salt
  • 125ml semi-skimmed milk
  • 50g butter, melted
  • 1 large egg
  • 1 tbsp chopped fresh sage leaves
  • 3 tbsp freshly grated Parmesan cheese

Method

  1. Heat a non-stick frying pan spray with oil then add the mushrooms and saute for 5 mins until soft. Leave to cool.
  2. Pre-heat the oven to 200°C/Fan 180C/400F/gas mark 6.
  3. Arrange 6 paper cases in a muffin tin.
  4. Sift the flour, baking powder and salt into a large bowl.
  5. Add the milk, butter, egg, mushrooms, sage and 2tbsp of the cheese lightly mix together.
  6. Divide the mixture between the muffin cases and sprinkle over the remaining cheese.
  7. Bake for about 25 minutes, or until well risen and golden.

I only like chocolate muffins the ones you can bake with Betty Crocker's new mix. They are very easy to make and you also save a lot of time.
