People often think of beans when they think of cornbread. This zesty cornbread goes with almost any food and looks beautiful on the buffet or table. Include this delicious treat on your Thanksgiving or Christmas table as part of your holiday happiness.

This Southern cornbread appeals to more than cornbread-lovers. People who don't usually eat cornbread will flock to the serving table once they taste it. This recipe creates a completely different consistency which appeals even to some who don't eat traditional cornbread. Its hearty homemade cornbread flavors remind you to spend more time in the kitchen.

Homemade Cornbread Connects to the Past

Many schoolchildren study the importance of corn in the past, and the ingredient list of many products attest to its importance nowadays. However, a number of people haven't experienced the joy of making cornbread. Once a person discovers how easy it is, this flavorful cornbread may be found on the table more often.

This homemade cornbread has been referred to as Winter Bread, due to its ability to warm you inside and out when you are cold. But don't limit it to cold weather, as it can dress up a brunch, buffet, or other occasion all year round. This can be served just out of the oven, but is also delicious when served cold.

Ingredients

  • 1 1/2 cup cornmeal
  • 1/2 teaspoon baking soda
  • 3 teaspoons baking powder
  • 1/2 teaspoon garlic powder (if desired, fresh garlic to taste)
  • 1 teaspoon salt

  • 2 jalapeno peppers, chopped
  • 2 large eggs, slightly beaten
  • 1 can (around 16 ounces) creamed corn (some prefer whole kernel corn)
  • 2/3 cup olive oil (vegetable oil works also)
  • 1 cup sour cream or buttermilk
  • 1 minced onion

  • 1 1/2 cups grated Cheddar cheese

Directions

  1. Grease baking pan.
  2. Preheat oven to 350 degrees.
  3. Mix dry ingredients in large mixing bowl.
  4. Add remainder of ingredients except the cheese.
  5. Pour half of the batter into greased baking pan.
  6. Sprinkle about half of the grated cheese over the top of this first layer.
  7. Add remaining batter, then sprinkle rest of cheese on top.
  8. Bake approximately 1 hour, bill toothpick comes out fairly clean when inserted.

Serves 12-15.

Variations

  • Holiday Uses - For festive occasions like holidays or Christmas, use at least half of a red and half of a green bell pepper.
  • Meat Lovers - In Step 3, when sprinkling the grated cheese, one can add bacon bits, cooked sausage crumbles, etc.
  • Not So Hot - Substitute green chiles for the jalapeno peppers. You can also add chile powder to taste.
  • Vegetarians - Enjoy this recipe by not adding meat and add more veggies if desired.

Serving Suggestions for Tasty Cornbread

Once your family and friends have tasted it there may not be leftovers.

Meanwhile, extra bread can be sliced, buttered lightly, and toasted or heated in oven for a few moments.

It also makes a nice addition to any sack lunch the next day, or a few days later.

So the next time you're in the mood for homemade food, make up a batch of Tex-Mex cornbread and watch it disappear. Who knows, one day you might even want to make a loaf of bread
