The best homemade coffee cake is one that is both easy and delicious. Made with fresh Granny Smith Apples, blueberries, walnuts and cinnamon, this one is moist and tasty.

Coffee cakes are simple, versatile little cakes that go well in a variety of situations. Although coffee cakes can be made with or flavored with coffee, the term usually refers to cakes that are served with coffee or other warm beverages. Coffee cakes can be sweet and sugary or not. They can be dry, moist or in between.

Coffee cakes are great for breakfast or morning coffee or tea, or as an afternoon snack or simple dessert. They can be eaten plain or with a dab of whipped cream or dusted with powdered sugar. They also are good to take along on picnics, pot luck meals and family gatherings.

The best homemade coffee cakes are ones that can be assembled quickly for last minute guests or a leisurely weekend breakfast. Fresh fruits and low-fat ingredients help dispel the old idea that coffee cakes are rich and fattening.

The following recipe is lower in fat than some coffee cake recipes, but the fresh apples and blueberries give it flavor as well as a moist texture. Less sugar or a sugar substitute can be used if desired.

Homemade Apple Blueberry Coffee Cake Recipe

Filling

  • 1 medium Granny Smith Apple or other apple peeled, cored and sliced
  • 1/4 teaspoon All Spice
  • 1/4 teaspoon cinnamon
  • 1/4 cup chopped walnuts
  • 2 - 3 tablespoons brown sugar depending on the tartness of the apples
  • 1/2 cup fresh or frozen blueberries (if using frozen blueberries, let thaw first)

Batter

  • 2 cups low-fat baking mix (such as Bisquick or Pioneer baking mix)
  • 2/3 cup low fat or skim milk
  • 1 egg
  • 1/4 cup brown sugar

Topping

  • 2 tablespoons butter, cut into pieces
  • 1/2 cup brown sugar
  • 1/4 teaspoon cinnamon

How To Make the Coffee Cake

  • Preheat oven to 400 degrees F.
  • Lightly spray insides of an 8” x 8” square pan with cooking spray.
  • In a four-cup measuring cup or small blow, stir together apples, All Spice, cinnamon, walnuts and brown sugar. Let stand ten minutes, stirring once or twice to produce a cinnamon-sugar syrup.
  • In a large bowl stir together baking mix, milk, egg and brown sugar until blended. Batter will be slightly lumpy.
  • Carefully fold apple mixture and blueberries into batter.
  • Spread batter evenly in pan.
  • In a small bowl blend butter, brown sugar and cinnamon for topping and sprinkle evenly over top of batter.
  • Bake at 400 degrees F for 25-minutes.
  • Remove pan from oven and let stand on cooling rack for at least ten minutes before cutting into squares.
  • Serve warm coffee cake plain or topped with whipped cream or ice cream for dessert.
