Mini Cinnamon Scented Loaves with Figs and Toasted Walnuts

This fig recipe with toasted walnuts is scented with cinnamon and orange zest. Insert loaves in cellophane gift bag and tie with festive ribbon for holiday gift-gving.

Fig & Walnut Mini Loaves Recipe

Ingredients:

  • 1/2 cup vegetable oil
  • ¼ cup orange juice
  • 1 cup brown sugar
  • 1 egg
  • 1 tsp orange zest
  • 1 cup all purpose white flour
  • ½ tsp. baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 cup chopped dried figs *
  • 1 cup chopped toasted walnuts **
  • icing sugar for topping (optional)

How to Prepare the Fig and Walnut Mini Loaves

Preheat oven to 350° F.

Servings: 6 mini loaves

  1. Grease and flour (or spray with cooking spray) 6 mini loaf pans.
  2. Combine vegetable oil and brown sugar together in bowl of stand up mixer and mix until well combined.
  3. Add egg and mix well.
  4. Add orange juice and orange zest and mix until well combined.
  5. Combine flour, baking soda, cinnamon, salt and baking powder in separate bowl.
  6. Add to brown sugar mixture and mix until well combined.
  7. Fold in chopped figs and walnuts. Batter will be thick.
  8. Divide batter among the six mini loaf pans.
  9. Bake for 30 minutes or until a cake tester comes out clean.
  10. Cool fig and walnut mini loaves for 15 minutes.
  11. Remove from loaf pans and finish cooling on cookie rack.
  12. Sift icing sugar atop of the mini loaves or drizzle with Orange Glaze.

Orange Glaze

Ingredients:

  • 1 cup icing sugar
  • 2-3 tsp orange juice or more as needed
  • 1 tsp orange zest

How to Make Orange Icing:

In a small bowl, stir together icing sugar and 2-3 tsp orange juice or more as needed to make a drizzling consistency. Add orange zest.

*How to Toast Walnuts:

Preheat oven to 350° F.

  1. Spread walnuts on to non stick baking sheet.
  2. Toast walnuts for approximately 10 minutes turning walnuts over a few times.
  3. Let walnuts cool before using.

**How to Chop Dried Figs:

  1. Cut stems off the dried figs.
  2. Place figs in bowl of food processor fitted with a steel blade.
  3. Pulse until figs are chopped into small pieces.
  4. Or
  5. Cut stems off the dried figs.
  6. Place figs on cutting board and cut into small pieces with chopping knife.

How to Store the Fig Walnut Mini Loaves

Store mini loaves between sheets of parchment paper in airtight container. The fig and walnut mini loaves will keep for 2 -3 days.

How to Freeze the Fig and Walnut Mini Loaves

Wrap plain mini loaves individually with plastic wrap and freeze in freezer bags.

Holiday Gift-GivingI

Insert a small doily at the bottom of cellophane bag approximately 4 by 10 inches in size. Place a Fig and Walnut Mini Loaf in the cellophane bag, wrap festive ribbon around top of bag to close.
